气调冷库是在冷藏库的基础上增加气体成分调节通过对贮藏环境中温度、湿度、二氧化碳、氧气浓度和乙烯浓度等条件的控制抑制果蔬呼吸作用和自我消耗使之处于近休眠状态减少失水减少病害发生延缓其新陈代谢过程从而较长间的保持被储物的质地、色泽口感、营养等基本不变更好地保持果蔬新鲜度达到延长果蔬贮藏期的目的是目前国际上使用最普遍效最好、最先进的贮藏保鲜技术之一

气调库储藏的原理

传统的果蔬贮藏保鲜方法有简易贮藏、通风库贮藏辐射保鲜化学保解冷库保鲜简易贮藏通风库贮藏设备简单投资少但贮藏效果差贮藏期短腐烂损失严重辐射及化学保鲜在部分水果上有一定适用性但存在辐射及化学残留污染不是所有果疏都能应用气调贮藏能在适当低温条件下通过改变贮藏环境气体成分相对温度最大程度地创造果蔬贮藏最佳环境其效果表现在以下方面气调贮藏营造的低氧(一般02含量为1%5%适当的CO2浓度能有效地抑制呼吸作用减果蔬中营养物质的损耗同时抑制病原菌的滋生繁殖控制某些生理病害的发生清除贮藏环境气体中的乙烯以抑制其对果蔬的催熟作用延缓后熟和衰过程增加环境气体中的相对湿度以降低果蔬的蒸腾作用从而达到果蔬长期贮藏保鲜的目的
